PlatformSensorAndProviderLinuxTest: Make InitializeMockUdevMethods() implicit.

Instead of requiring each test to call InitializeMockUdevMethods(), install
the mocks automatically in MockSensorDeviceManager itself.

There is no functional change, but the code should look cleaner.
